Chicken, Walnut + Watercress Sandwiches
1/3 cup walnuts
150 g roast Chicken, shredded
3 sticks of celery, finely diced
1/3 cup mayonnaise
2 tbsps creme fraiche
1 tbsp chopped dill
Salt and pepper to taste
1 cup Watercress
4 Slices of Crusty Bread
1. Coarsely chop the walnuts and then toast them in a small frying pan until golden. Set aside to cool.
2. In a small bowl combine the chicken with the celery, mayonnaise, creme fraiche, walnuts and dill. Season generously with salt and pepper.
3. Butter two pieces of bread and spread the chicken mixture over the top. Pile on the watercress and top with the remaining bread slices.
