Hot Cross Bun Spiced Bircher Muesli
If you’re going away for Easter this is the make-ahead breakfast for you! If you want a fuss free breakfast while you search for goodies that a cheeky bunny may have left behind, here it is. Cinnamon, ginger, nutmeg, and delicious orange all combine to make this Bircher fragrant and it only takes a few minutes to prepare, making it the perfect accompaniment to a relaxing weekend.

1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
2 cups of rolled oats
2 cups of orange juice
1/4 cup of greek yoghurt
2 tbsp currants
1 tbsp flaked almonds (and extra to serve)
Zest from an orange
Berries to serve
1. Grate the apple.
2. Combine all the ingredients in a bowl and stir well.
3. Cover and place in the fridge overnight.
4. When you are ready to serve (or eat!) toast the extra almonds for a minute in a pan. Serve the muesli in glasses topped with berries and the toasted almonds.
