CREATIVE CHRISTMAS: Buttery, Herby, Spicy nuts recipe
By Kirsten McKechnie.
Yum, yum, yum! This is one of my favourite snacks. You can make this ahead and just heat the nuts in a pan when you are ready to serve. It doesn’t look like all that much perhaps, but you will make a friend of anyone who grabs a handful.
400g assorted, unsalted nuts (I used 50g each of almonds, macadamias, cashews, peanuts, brazil nuts, walnuts, pecans and hazelnuts.)
1 tbsp rosemary
¼ tsp cayenne pepper
½ tsp cinnamon
1 tsp light muscarvado sugar
2 tsps flaked salt
½ tbsp butter
1. Combine all the nuts on a tray and bake at 180°C for 6-8 minutes. Keep an eye on them to make sure they don’t burn (especially the macadamias!)
2. While the nuts are baking, melt the butter and combine with all the other ingredients.
3. Mix them together and serve them to your guests warm with a glass of Yellowglen Sparkling.
